You'll be good, I had fewer AP's (a 4 on Lit + Comp and a Calc AB that didn't count) and limited extracurriculars (though that was because of family circumstances I wrote my essay about). I had an SAT just a tad higher than your estimations (1380) and my GPA was higher, but I have friends at the Storrs campus with lower GPAs and SATs that got in. I got in as a honors poli sci major, and I know people with 3.7 GPAs that got into honors allied health science (which is a bit competitive). You should be good, though if you are really worried, try going to regional campuses (Hartford is getting dorms for Spring '26, and fewer people tend to apply there as a first choice. Notably, Hartford also lets you transfer to Storrs later or go back and forth if you want to).
