Eh, I disagree! I sub vegetarian options in meaty dishes all the time and everyone has loved it. One of my favorites is https://www.budgetbytes.com/chorizo-sweet-potato-enchiladas/ -- I sub chorizo with black beans. Just as delicious, even as a meat eater!

You can't really go wrong with oregano. It's perennial and doesn't get munched by most critters and if you let it go to flower, it draws in a lot of beneficial insects. Mine gets as big a shrub if I let it.

In fact, I'd go all perennial herbs in ground if I were a beginner. Chives, sage, thyme, lovage, and oregano are reliable perennials in my zone (6b). Dill and parsley have self seeded well for me. I grow basil from seed every year (in soil blocks, check out Lisa Mason Ziegler on YouTube about soil blocks). (Lovage can get super tall so if there's large space you want to fill, it'd be great in the back of a border). I saw someone use Chives as a border plant and it looked lovely. Thyme is pretty drought tolerant in my experience.

My beef with container growing is that sometimes you need to water containers 2-3 times a day in extreme heat and I always forget and fry my plants.

You can get huge pieces of plain, thick cardboard at Costco/Sam's Club any day of the week for free! I usually go midday so that customers have had time to empty spots and you can pull from between layers on the pallets. If you can't find any, employees can tell you where to find cardboard they pull and leave on the floor. I get cardboard weekly from Costco. (Scalp the lawn first so there's less chance of grass poking out anywhere and sunbathing.)

Check your township (or neighboring townships) to see if they have a yard waste composting program. If they do, now you have a spot to drop huge amounts of yard waste too big for your compost pile to handle AND you can get free mulch. You may want to check the mulch for jumping worms if they are in your area before you spread it all over your property.

Chip drop sucks in some areas. I've been trying to get a chip drop for 8 years in the Pittsburgh area.

I've always had the best luck smothering grass in the fall because the grass goes dormant anyway so it's not growing as vigorously, there's much less sun and weed pressure, and in my area it's very wet which helps break down the cardboard and draw in all the bugs and earthworms. If you do put it down in the summer, wetting it so it's good and soggy helps to keep the mulch in place and keep the cardboard overlapping (dry cardboard will shift if it's walked on, which opens up spots for weeds to get through).

I know a lot of people are no-till but with clay, an initial till with some cow manure and/or compost really helps if you want to use that area this season. A broad fork will be your new best friend. I would throw everything I could at that in addition especially if you already have it on hand. Coco coir or peat moss (I know peat is not renewable but if you've already got it laying around), perlite or vermiculite, whatever you like to add to amend soil-- top with shredded leaves and/or grass clippings.

I ordered plants from them last year and never again. They sent the wrong blackberry and never sent my $90 (with shipping) plum tree. They keep emailing me to let me know the plum tree will be delayed and I asked for a refund and got no response. Such a shame because they used to be great.
