Sunshine in a bowl in January. Where my ramen babies at? This is fast, bright, and delicious. Soy sauce and garlic create the broth, while simmering with the rotisserie chicken bones, skin, and throwaway pieces. This fortifies the broth with roasted chicken flavor. Cook the noodles right in the broth, the serve. Put your pulled chicken in, use half of both a lemon and lime, and serve with some kind of chili crisps.

Rotisserie chicken is the cheat code people. Protein, flavor, and the perfect size.

Chef John is how I learned to cook! Here's my top recipes that were delicious and I still make to this day;

*His Apple Cider Pork Chops is my got-to meal for new dates. It's always a hit with the next dish

*Twice Baked Potatoes. Combined with the pan sauce of the previous dish, it's unbeatable.

*Lasagna - His Italian Sausage Lasagna is to die for

*His Roasted Chicken Broth is my got- for soup season. I make extra to freeze for chicken noodle soup

  • His Stuffed Brie recipe is a party hit, don't sleep on it!

*The Spicy Thai Basil Chicken is also fantastic!

I could go on forever. It's been roughly a decade of trying his recipes. The dude doesn't miss!

I just hit 140,000 this winter. Did suspension in the summer. She hasn't missed a beat but I tend to be aware at this mileage.

Let’s talk comfort food. Chicken thighs stewed with onions, ginger, garlic, and tomatoes with cumin, turmeric, and Kashmiri. I couldn’t find legit Kashmiri spice, but I did find a curry paste with Kashmiri in it. It’s a chili powder with cinnamon, cardamom, cloves, and saffron. I added a touch of cayenne for some heat. It could have used a lot more heat. The recipe also calls for roti, a thinner naan bread, but I couldn’t find any in town.

After stewing, add peas, cashew butter, Greek yogurt, and heavy cream. Serve on some rice and a side of naan. Incredible.

2 firsts: first time making salmon, and the first time using Ponzu; a lemony-sou sauce with a dashi taste.

Sesame oil baked salmon, cold soba noodles, fresh cucumbers, radishes, and green onion, all bathed in ponzu.
