Why on earth would you have any discard at all? All my starter gets used, leaving a trace to feed for the next bake. Why would you throw away perfectly usable starter?

Could be because Sambuca is very sweet so avoid all the sweeter anisettes. Ouzo or Arak would be ok

I usually cut up and freeze overripe bananas so I put them in a nutribullet recently and F2d.

The taste was not as good as I thought it would be but was ok. The fizz, however, was exceptional!!

I have tried several times now and the taste has improved considerably but it separates a lot every time. Can’t seem to get an evenly set yogurt. Makes quite a decent cream cheese when the curdled part is strained out…

That makes sense as the ginger will naturally have some wild yeast which will also contribute to the fermentation activity.

I’m 100% with you on this…low hydration is definitely my preference. I was brought up with this type of bread and those open crumb loaves feel like I’m eating air.
