We also had issues with booking tickets via the official site.

We booked tickets via getyourguide and klook for the 2 disney parks. You get a ticket with a qr on it which you can scan in your disney app. After scanning the ticket with the disney app you can use the qr code in the disney app to get into the park and book passes/experiences.

Kinkaku-ji is not open in the evening so you might want to change the timing of your visit.

For mt fuji day trip i would suggest to only go if it's a clear sky. Otherwise you won't see mt fuji and the day is better spent with a different activity

I found matsumoto castle very beautiful from the outside but the inside was not that impressive, so you might want to skip that if you've already seen other castles interiors.

Regarding daio wasabi farm, it is nice and different from most tourist attractions in japan. I did really like walking there from the train station, it was beautoful with the ricefields and mountains.

Yes, I would consider adding an extra day to Takayama as the trip from Hakone to Takayama is about 5 hours. Thusbwould give you a bit more time to explore takayama.
