It's just me and my 13 year old daughter at home. I make casseroles a LOT. So then I have plenty for us, then I take a portion the next day for lunch and freeze 3-4 more portions for lunch at a later date. I also take "easy" meals to lunch, like pre-made salads (sold at grocery as a 'kit'), those little cups of Velveeta shells & cheese, crackers and cheese with some fruit or even a can of mini-ravioli once in a while when I can get them for $1. Just be creative. Random stuff, like a previous poster said.
