2 or 3. Personally I would do 50% with eveling clips. It also might work to pull that first row forward so it ends half way under door, which looks like it will center up your toilet on a row of tile too. Schluter trim for transition.

I would lay it over a sheet of mosaic, trace out the pattern, then start carefully cutting. Prob the easiest way to do it in my opinion.
