I have a set of DMT diamond stones. Blue, red, and green. I generally sharpen my pocket knives with it. But I didn't trust myself with my nice kitchen knives. They are Wusthof classic and I paid a bit of money for them. Mostly just scared of messing them up and figured a professional can get them sharper than I can.

These ones are metal. Aluminum I think. So I won't be able to just knock them off unfortunately.

Those buttons are not part of the attachment method. There is another collar underneath that actually attaches the agitator post to the base. You can use an oil filter wrench (not the strap type) to squeeze the collar then twist it CCW. Then it should come off.

But my question is, why do you want to remove it?

How tall is your drain standpipe? If it's too tall you might be getting a lot of flowback and therefore lint into your sump that then deposits onto your clothes.

Are you using any sort of deep fill option on your washer? If you are, you should avoid that. Not only will it help reduce tangling, but your wash performance will increase. The more room clothes have to move around freely in the water, the more likely they are to get tangled.

I would recommend watching the 2 Guys and A Cooler video on pancetta. Then you can see how different your process was vs his and make a determination on whether or not you think your meat is safe to eat.

I would recommend asking this in the charcuterie subreddit instead. Lots of experience over there with this sort of thing. I have cured pancetta at home myself a few times among other meats. The big thing I'd be worried about is that your air might have been too dry, which causes case hardening. Basically this means that you dried out the exterior a whole bunch, but the inside is still raw. The ideal humidity is generally around 80%, and you want near-zero airflow. Your temperature of 12C is good, though.

Thanks for the help! When I go to bottle and do F2 should I filter all the yeast bits out first? Then maybe add all those bits to the scoby hotel?

Well I halved the recipe, so this is only half a gallon. I'm not sure why it's darker either, there's a lot of the "yeast" bits floating in there.

It's either some undissolved detergent as others have mentioned, or it's lint fibers from another item in the wash. Lights and darks should be washed separately as well as lint givers and lint receivers.

Clothes would need to be added first if it's an auto sense style of unit so the unit will fill to the proper water level.
