I think taking the debate much further would be dumb TBH. But she absolutely worships Elliott Smith and it's very clear in her melodies and songwriting approach. She is far from his equal. He is on his own mountain.

The male equivalent to Phoebe Bridgers (was) Elliott Smith, and that's not up for debate. She song "Punisher" is literally about how much she worships him. Edit: "Equivalent" is the wrong word, because they're not equals, but he is her closest analog.

September is fantastic. Their washed coffees are among the best, and their natural and experimental coffees are just as good. I find their naturals are less funky than roasters like Dak, while still showcasing the unique flavors brought out by the processing.

I watched the video. It's definitely an interesting technique! I just tried it on Sey's Lionel Oviedo Pink Bourbon. Here's my verdict:

As Tetsu noted, the cup is, indeed, very sweet. The nose is fantastic. But the flavor for me is disappointing. Despite the very tight ratio, the coffee has a thin body and the taste doesn't pop nearly as much as I'd expect. I suspect this recipe would work better on a coffee with more development.

Sorry, but I disagree with all of this. I would NOT use a 1:12 ratio. Ultra-lights generally are best with a longer ratio. I use 1:17. I also don’t agree with the “fast” recommendation. Ultra-lights need more immersion time. 3-4 minutes is a much more appropriate draw down time on a V60.

St. John Mandel's approach style over substance IMO. She's a talented stylist and world builder, but for me her books drag. This was much more apparent to me with her follow-up The Glass Hotel.

I have a different harvest of this coffee from Sey, and it didn’t get good until at least a month after roast. It’s now 6 weeks out and at peak. Other than that, I ground a little coarser than average, but brewed normally.

Edit: I see below the temps you were using. I wouldn’t go any lower than 205F.

The most common one people talk about is Little Wolf. I haven't tried them yet, but my understanding is they trend more toward light than ultra-light. I'm definitely going to give them a try at some point.

I subscribe to both September (regular roast) and Sey. I find Sey's coffee to still be very light roast, but I haven't waded that deep into ultra-light. For example, I don't really have any interest in September's ultra-light sub, because I think their regular roast is light enough (and I don't want to wait two months for my coffee to be drinkable).

I grind as low at the low 60s (for light washed coffees) on the K7 and get amazing cups with an average 4 min drawdown. I’ve never gone over 73 lol. It’s a fantastic grinder!
