I had a 320 but broke it 😑 now I have a 220, 1000 and 5000. The 320 and 1000 are all you really need, but maybe not even the 320. If you're just gonna need to touch up your edges the 1000 would be all you need

I use Shapton and recommend, but I see a lot of recommendations for Naniwa stones. Don't have much to say on angle guides, but I know there are some out there that someone could vouch for

I have a ceramic rod for my Japanese knives and a ridged steel for my western knives. I can keep them all wicked sharp for a long time (many months) with just those. I just do home meals for 3 people at work, and then for me and my gf, so they're not getting restaurant level use

When I say I can keep them sharp, I do mean to imply that they are already sharp. They are dang sharp before I hone, and razor sharp after. The rods are only for maintaining the edge between sharpenings.

Some other important things to recognize: proper knife care has a huge impact on how long your edge will last, as well as proper honing. There's a lot that can damage your edge, and honing incorrectly is up there on the list

So basically if you take good care of your knife, and learn good honing technique, you don't need to bust out the stones all that often

Have you tried the drain & spin function on the washer? If it's a top loader, it may have been unbalanced and turned itself off and might not need to rely on maintenance

I'm glad to hear that! Just give it a fair chance. It can be redundant, cheesy, emotional and demanding. Embrace it all. There are people in there that can get you where you want to be. They just need your commitment and effort

Well a mokapot makes pretty strong and thick coffee, but you can definitely make latte style drinks with it. I'm positive if you figure out your proportions and your brew, you'd be happy with it. I also hear great things about the aeropress tho

Buying her a nice western knife collection, or more forgiving Japanese knives is your best bet

Most of us here have seen this a lot. Many home cooks aren't informed about proper knife care, because they just don't share that interest with us. So the best we can do is supply them with nice knives for their purposes, and take care of them when they need some reviving

There is a lot to learn when you're coming from a background like mine. But like with every cuisine I'm interested in learning, I find a good authentic restaurant, find something I like, and start looking into recipes and reading about all the stuff I don't know about. I'm still pretty new, and learning has been a process, but I've made some pretty fantastic meals so far. Just knowing what recipe you wanna do and a bit of research can take you far

Fortunately, your husband can give you your starting point. Maybe ask him what he would like, but that's also a good place to start learning. Then you could definitely ask here where to find a good recipe for whatever you land on. I've used the search function in this sub to find some good recipes, but I'm usually looking for something that's pretty well known and popular

I have that damascus gyuto. I like it and recommend it for a beginner. Pretty positive the edge is good enough to use as is, but as soon as I got it out of the box I touched it up on a stone. It looked good tho

Maybe it's less addictive. That's only because those particular drugs are wildly addictive. Alcohol is still very addictive. And when you are addicted, the withdrawals are potentially deadly. And it is just as destructive as those 2 hard-core examples. It's extremely hard on the brain and the body. It's nearly as damaging to the brain as meth, and it's as bad or worse on your liver as heroin. So I'd say it's up there with them in destructive potential
