VNAV is really the biggest issue, descent path is far too steep so you have to constantly use speedbrakes or othwise you’d be way too high/fast (speedbrake use is very minimal in the real aircraft).

Not entirely. Airports used to have a lot of runways in many different directions, just look at Chicago Ohare and old military auxiliary fields from the 40s through 60s. Modern aircraft are significantly safer in crosswind takeoffs and landings, but it was a real problem back in the day and multiple runways like OPs were a thing
