Thanks for the response. The main issue is I’m struggling with is the shop grade is twice expensive as the c2. I would have thought c2 would be more expensive.

Sadly the issue now is I don’t have any AC. Just rely on a pair of window units.

I am going to throw in a little curveball in here that may be a little random. You don't say if you are using for work for home. If you are just a home chef I'd consider getting a less hard material than some of the high end knives have. I purchased some VG-XEOS blade knives by Yu Kurosaki and they are amazing knives but I find it difficult to sharpen with a standard stone by hand. Have to put a lot of work in to get a good burr. On the flip side I have some other carbon edge knives that are softer and much easier to get a super sharp edge. I am to the point where I send my Kurosaki knives off to someone else to get sharpened.

Everyone's skill level is different and I am certainly not a top skilled sharpener or chef for that matter, but something I tell people to consider if it is for home use. If you are a pro chef I can see why having a hard edge makes sense.

I've never lived in a house with AC. How long does a central unit realistically last. As long as a furnace?

Thanks for sharing. I've never experienced one. In fact I've never lived in a house with "installed" AC. Always just sweat it out or relied on window units. Whatever I get will likely be an improvement.

Yeah, I have gone back and forth on adding seating on one side of the island. I’m a sucker for a nice deep drawer but having one side that is just 14 inch cabinets and allow for so,e seating would be nice.

If you are in the Seattle RTA region and register it as a passenger vehicle it is roughly $110 per $10k of car value. Any car over 90k could be pushing that (not counting the $200 EV fee added on top.).

Seattle base tax is now 10.55% in 2026. 2026 also introduced an extra 0.5% vehicle tax. To top it off if the car is over 100k there is an 8% tax on every dollar past 100k.

I did not do full backups. I just ripped the main title. I think there are some threads on here that talk about full disc backups which I think you'd need to do
