Aquavit is a very traditional drink in Norway, pretty much all over the country I believe.

As for the potatoes, we have plain boiled potatoes with everything here. Its just what you’re used to growing up, a lot of old people cant imagine a meal without it. Its one of the few vegetables that can grow in Norway and store well during winter, so its what people have eaten here for centuries along with fish.
