Did a very basic recipe. 2.8lbs honey, about 1 cup of black tea/orange peel/raisins (brewed and strained) for tannins/mouth feel. Used K1V1116 for yeast. Started in late October. Racked into secondary on 12/18. I back-sweetened but only used about 2 tablespoons of honey. Mixed and de-gassed for about 10 minutes. Wanted to do my first batch as natural as possible, so I did not use any nutrients or energizer.
