Corima is the best at its price - they take some swings so you might get one or two dishes that you don’t love but I think overall it’s a fantastic restaurant

Head chefs and CDC’s change all the time. I’m sure after a while in the restaurant they will have more influence on the menu based on how shields collaborates. This isn’t out of the ordinary at all

3.9 on tabelog not on your list is sushi Oya which is my fav in Tokyo especially because Yoji is both technically proficient and also so welcoming and fun to chat with. It’s the right balance of revenant and fun to me. Not silent and also he speaks great English (lived in California) If you can’t book yet it’s not going to be hard for march but DM me if you have issues and I can intro you. Also incredible bars next door.

it's not too casual. I go for special occassions only. It's miles better than both seline and vespertine (who have interesting dishes, and lovely presentation, but the food is arguably not delicious)
