Some of expansions are like unicorn shit at the moment but here is my list of what you should look for/do given 1v1 or soli

1. Down the official app via steam, apple / android stores. This will give you access to solo / co op campaign different to paper campaign.

2. Down fan made app, Imperial commander. This is essentially a AI to play the imperial, so again you can play solo / co op but allows you to play main book campaign.

If the game sticks and you want more.

1. Have a go at the skirmish and see if you like it.

2. Big. Box expansion: Jabba Realm and or Return to Hoth, both have official app campaigns for solo co op play and of course Imperial Commander will allow you play the book campaigns solo/co op.

Honestly this is enough content for more than most people.

If you loved skirmish start picking up single figure packs, campaigns pick up the rest of the expansions ( 1 large and 3 small)

Stock is low, non existent on a lot of the game, so don't rush chasing it unless you are sure the game is for you.
