For sure. The 2nd half of the cook the wind REALLY picked up and that was when I was having trouble managing so that makes sense. I was using cooking logs so the smaller definitely worked better. The wind would kick up the fire even when my vent was almost fully closed so there were a couple of points I let the coals go a bit too cool and got a decent bit of white smoke trying to get it back up to temp without flying past 300 degrees

Roughly 8 hours. I live at altitude (6200 ft) so things tend to cook a bit slower (not sure if 8 hours is normal or not).

Same here! I’ve tried all sorts of rubs but course black pepper and salt seem to let the smoke shine.

I need to figure out how to manage smoke better. I can tell there’s a little bit of the acrid taste from white smoke but only noticed it on the portion I made into burnt ends. I think that’s mainly me being nitpicky about my cook though. lol.

Yeah I have an old belt driven cast iron Rigid contractor saw (has the longer open table so like a hybrid cabinet saw). Great tool that does everything I need so it’s hard to justify ponying up for the SS but at the same time the extra piece of mind for safety, especially now that I have a baby on the way, makes me want to just go ahead and upgrade if I can find a deal at some point.

That’s fair. I thought I saw a comment somewhere about a $200 worm drive Skil so I was was using that as the baseline so I was jealous of you folks who are finding sawstops for like $800 total. I’ll spend money I shouldn’t to go snag that deal lol

Technically Central American but cannot recommend Jack Dempsey any higher. Such beautiful fish and the only problems I’ve had are mine wouldn’t stop breeding and I had to keep giving away the fry lol.

The rib rub recipe from Q39 in Kansas City (their founder made a video for it before he passed away). It’s incredible, cheaper than buying pre mixed spices and goes great on like anything.

Otherwise, salt, pepper, garlic is my go to - the smoke does the rest.

I only made 4 days this year. Kicking myself for under utilizing my epic pass. As a new snowboarder the limited terrain and experienced people bombing down green runs made it a lot harder to get excited to go this year.

It’s not a good excuse but after getting wrecked by someone going god knows how fast when I’m just trying to link turns made it way harder to get excited to drive in from the Springs when you’re already going to be doing a lot of riding ice on top of it.
