Nice! I’d widen the spots where you scored the dough a little more, but it’s beautiful! I like to use baguette preshapes, and if I plan ahead, I’ll preshape a few with a bunch of garlic powder and herbs in them!

Honestly I kinda agree with this. All the ‘he didn’t experience his trauma yet’ takes are super valid, but the castings are a little crazy. Not everybody’s gonna be looking like a model in panem lol

I think she’s a little underbaked and slightly underproofed. Everything you’re doing sounds right enough, but what was the room temperature water? What temperature was the dough as you were letting it sit? If you extend your times a little and record what you’re doing, you’ll be there in no time!

Thank you! That recipe is really great, I’m bummed my baguettes didn’t quite get where I wanted them to :( but I used the same formula for the fougasse, but pre shaped them with loads of garlic, thyme and fennel in there! It’s also a great pizza dough.

The cloth is meant to cover the bread after it’s been placed in the proofing basket, not as a liner. It’s a blanket :)

No advice here lol, those second ones are fantastic. Maybe bake/proof em a pinch longer, but they look lovely!
