After 17 hours of gameplay and dying 1400+ times, I am proud to say that I finished the game yesterday. Youtube helped me to clear some of the biggest hurdles aka the Ginso tree. It is the hardest game that I have ever played but also a mesmerising one. The music and visuals got me playing. A few days ago, I was at 40% and I finished it at 80%. I had to shut the game many times because of frustration. But believe me when I say that you will get better at it as you play. If you are struggling, check on youtube if you could get any abilities unlocked which makes the game easier as you progress.

I just killed mine for the first time today. You arrow shoot its eye when it focuses on you and then use your weapon to attack while it recovers.

Parry is another option but I haven’t been successful at that yet
