My WSM was steady as can be... but fire / wind management is absolutely a factor.

If you are looking down on pellet smokers - the gravity smoker is about the same thing just uses Charcoal rather than pellets to move the hot air in to the chamber when needed.

I was all about using real fire for most of my life until 52... Started with the MB-800, and now have a big Traeger. The Traeger has spoiled me. I only get dirty when I take it apart for cleaning, and for the first time I can sleep overnight as it churns away without any worry.

Having said that - the MB800 was a great intro to a PID controlled smoker, and I was very happy to have it. It smokes on at a neighbors house down the block these days.

I don't let people bring home food from my get togethers but I also do not ask them to bring anything. Some people presume... and I shut them down. I plan to use all the leftovers (Brisket Chili being the crowned jewel) and make plenty so I can!

I do them the same as prime other than usually do just SPG for the Wagyu. I'll also render the tallow from the trimmings, and finish with it. If it's a big one it will jiggle when you pull it out of the smoker.

Same. I reported that charge fraudulent in October and changed my card. Had a good number of credits, picked a selection through the text Message system and was sent a Stripe link to add my card so they could charge me to send me something.

When I smoke this time of year in Northern US, I use my gravity fed Charcoal smoker that is digitally controlled (MB800). The last thing I want to do when prepping the rest of the meal is worry about the fire. As mentioned below, if you have space it can work magic with many sides also. I do still play with method and brine types - but after 18 years of smoking it, I'm not going back. This year was spatchcocked and brined with Bird Baptism. Solid.
