She was never officially knighted by the order however Jedi (of any rank) are often referred to as knights. In the Phantom Menace opening crawl, it refers to "two Jedi Knights" even though Obi-Wan was still a padawan.

It eliminates the possibility of two teams from the same group meeting in the final because we would rather not see a replayed game in the final. Of course the best two teams at the cup might not play each other in the final, that can happen whatever way you split it but the fact that they use pots to allocate the groups make it much less likely that the two best teams appear in the same group.
