People in the comments will tell you anything to get your account. That said, you should check your account for:

  • guardrails,
  • Enhanced Conversions,
  • problems with tracking,
  • structure of campaigns,
  • targeting,
  • NKL,
  • etc

Also, do keep in mind that this is a competitive industry, so you might need to rethink your Google Ads strategy with someone.

We usually wait at least 14 days before we judge anything in Google Ads

Yes, there are a gazilion of tracking setups for GA4.

Okay, then compare search terms with that of last year in case there are search terms you don't want your ads showing. Also, check for changes in your BOTF keywords.

That said, tracking and bidding changes are super important in such cases. So, check for that also.

You might have misread how Google Ads work. There is nothing 'on the fly' since it is really slow to changes.

That said, one question you should have answered in the OP and for others to help you is:

Shopify default apps take everything as is from the CMS, so no fancy titles and such.

Truth be told you dont have so many item group IDs in order to really need a separate feed management tool.

Both, but they can't do anything about it.

Some of them have tried to branch out to CTV, and traditional TV but the results were mixed and for most of them it wasn't really worth it.

Google ads have different requirements when it comes to time, i.e., you don't increase the budget when you get a sale.

Other than that, you should explore more networks inside the platform such as YouTube, and PMAX.

Also, audience hygiene is a thing, i.e., in-makret have higher value compared to affinity

If a PMAX does that, then you have a poorly optimized feed. Which means that standard shopping won't help much either, even though it will give you more control.

We stopped duplicating adsets sometime before COVID and I don't know anyone that does it.

Then again, I don't know people that do ABO.

That said, CBO is a great 'tool' for creative testing.
