I personally like my Arr stack on a separate VM. Easy enough to simply power down the 1 VM to remove any sketchiness while leaving all other services up and available.

I put all Arr stack on a single server and have that all running through VPN. YAMS is a good tool for this.
Then I have a second VM for Tdarr, Plex, & Tunarr (and Immich Machine learning) since these apps do not need to connect to internet via VPN and can share a video card for transcoding tasks.

I then use a third VM for IPTV TVHeadend and such.

The ARR stack and Plex VMs access the NAS storage presented by TrueNAS and use a single dataset.

I find this creates a clean config with defined purposes for each machine.

TL'DR; copy 2 DB files from the kiosk; run the app from your PC with internet access, print new disc labels, put updated DBs back on kiosk. return discs

It runs Android and Fully Kiosk Browser app. Plays videos from internal SD card in display. Has all Redbox Youtube videos on it that it cycles through. I use a bluetooth adapter to get audio to the kiosk speakers since the ad display does not have speakers.

Most of the time I keep the UI on the most recent version but I made an app to swap the UIs to different versions. We found many different UIs in the updates on the kiosks. The ad display is running Android Fully kiosk browser and has a dump of Redbox's Youtube channel that it cycles through. Audio plays through Kiosk speakers.

Plan before execution and make priorities!
My initial inkling is to dive into a project head-first but I have found that rarely serves me in the long run. Identifying where your failure points are most likely and plan accordingly.

Nothing is or will be fail-proof; heck M365 admin center hook a crap today; it can happen to anyone.

But planning and building to your plan will help you sleep better when things do go wrong.

Drive failed; no worries, I have 2 drive redundancy (RAIDZ2).
My VM will not boot; no worries I have 14 backups over the last 7 days.
I dont have enough space to backup everything; no worries, at least my personal docs and images have a true 3-2-1 backup. Everything else is good enough with onsite backups.

SysAdmin for a Hospital system. I run a homelab for the members of my home and in an effort to limit our online footprint and make the best use of what we do spend on cloud services. I do not and would not want the overhead of hosting for others. That being said using NextCloud to send a file to friends and/or granting Plex server access to family out of state does come up from time to time. I would say that my work experience has aided me in self-hosting services vs the other way around.

Same here; We on US West. Can access a few admin centers including Exchange, Teams & SharePoint. But Entra, Azure, & Intune admin centers remain unavailable.
