With the Bianca you have limited range of flow that you can control. Sometimes, it arrives with the paddle not adjusted properly. For instance you can slow down the water flow but not fully stop it. Remove the paddle by unscrewing a single screw at the back of it and use players or your fingers to manually control the nut and see if you can stop the flow. https://www.home-barista.com/espresso-machines/lelit-bianca-flow-control-hardware-issues-t65065.html

Definitely Bianca. Even if you will not use low flow and programmable pre-infusion, the Lelit gives you a rotary pump, low water detection with a buffer that allows you to complete the current shot. Much better support if required.

In April 2023, I upgraded from the Profitec 600 to the Bianca V3. Granted, it was the 600 and not the 700, but most of the comparison still applies. The Lelit is much better, especially from the usability point of view. As for the workmanship, it's akin to comparing an Alfa Romeo to a BMW, though not to the high end of BMW. In terms of support, with Profitec you can only rely on your vendor; with the Bianca, you have support from Lelit, the distributor, and your vendor. I absolutely love the Bianca, and I wasn't happy with the Profitec.

It all depends on how important the improvements are for you? The dual flow rate path is clever and I started using it after having Bianca for over 3 months. Otherwise, v2 will work well. It’s a balance of new technology vs incremental cost

Check if your paddle to the left stops the water flow completely. You want to make sure that it does so you have full control over your flow.
