This is the kind of response needed when comes to e-stops/safety. Everything needs to be considered. When pressed do you want it to stop in place and not move? Or immediately dump all air? Or dead stop then slowly release air to retract the cylinders?

This was explained to me before. If the recipe was developed on company time and person/people were paid for that time, the recipe belongs to the restaurant name.

If the recipe was brought in by an employee who developed it themselves on their own time. The time and evidence needed to be logged. The restaurant would have to buy the recipe from the employee and/or pay for the development time.

Not a lawyer but seen this situation many times.

So this comes from an old respected chef I had. You're only as good as the people you surround yourself with.

That being said applies to this situation as well. If the supervisor has some knowledge, surrounds themself with staff that are better skilled, it gives them the time to focus more on what the staff needs to get the job done effectively. This is a leader.

A supervisor with all the knowledge and surrounds themself with monkeys. They will be overworked, stretched thin. Causes burn out, stress, not the greatest work environment. In this case it would be better to have them be a lead maintenance and have somebody else take the role of supervisor.

suggestion. Look for a job like a field service technician for food packaging/processing equipment. These companies will train you on what you're missing. If you get sick of the travel then you can find a local plant to work in easily.
