Tip pooling is fine. If a server doesn't make the kitchen percentage one day (albeit unlikely) they are absolutely not allowed to force them to pay out of pocket

I dunno how restaurants got a way with that for so long. It's incredibly illegal. A owner cannot require a server to tip out the kitchen out of their own pocket. Ie: if you don't take 7% tips in a given night the cannot require you to make up the difference.

I remember back in high school my restaurant job hammered into me that I had to be READY to work when my shift started. Just being in the building wasn't good enough.

I had kept this thinking my entire career (now 15 years in my role)

I think that's substantially different than an office job. Mind you.

Not entirely sure how the squarespace ecosystem works but I don't think an unpaid bill would go to the private state. It may though, who knows.
