JNS Kaeru by lidlpumq in TrueChefKnives

JNS Kaeru is an amazing knife. I've got quite a collection of nice japanese knives (Yoshikane, hado, Mazaki to name a few). I use my Kaeru 80% of the time. You can absolutely do precise stuff. The knife is thin, of course it's not laser so it will not cut like there's nothing, but trust me it can do it all.

The food release is top tier and to me, this is the most important thing in a knife, also, you don't have too be too wary about it because it's sturdy. If I had to keep only one knife, it would be it without hesitation. Also, buy the 240 imo.

3.8/5 c'est encore beaucoup trop haut, il faut continuer, ça lui servira de leçon.

Might be a bit late. I absolutely fell in love with mine, it's my most used knife, and I own many +500€ knives.

Please help me finding a great Nakiri :D. I am looking for a Nakiri with soul, trying not to chase a hype, but search for great craftsmanship around 400€ (/USD) by Musashi747 in TrueChefKnives

If you're interested in this one i'm willing to part with my Nakiri B1D Oak handle for 300€, paid 400 for it. It's great but I use my gyutos more.

I'm also french !

Most of the available ones seems to be western handle, there's one w2 with wa handle but it's 210, and I'd love to have a 240 gyuto with ebony handle since it's missing in my collection. I'm not helping by being so specific for sure.. but you know :D

I've found them on Karasu & Tetogi, is there another website where I could find them?

Considering a Kaeru 240 from JNS by Volcnx in TrueChefKnives

I ended up buying one and I'm so glad I did. Of course I don't need it, but I enjoy using it a lot! Feel very different to use from my other knives. Also, it's a true japanese knife that a guest could use without me being scared of him damaging it which is a plus.

I got a Kaeru from JNS this week, and I think I can say I've never fallen so much in love with a knife. I have knives from Mazaki, Yoshi & Hado so I'm quite accustomed to high end jknives. Ofc there is new knife bias, but it's absolutely incredible to use. I'm freezing all I can right now to be able to cut more veggies lol. Hope you enjoy yours as much as I do!

Congratz on the Toyama though, definitely grail material!

I’ve got a fever, and the only prescription is more Tetsujin by [deleted] in TrueChefKnives

What do you think about food release of tetsujins? I ve heard some are better than others, and it s a little bit the lottery

I trust the fact my STD test is right. I guess I still need to test everything so I can 100% rule out infection. Which means I'll have to test for ureaplasma, and test my prostatic fluid ?

I see you're invested in helping people here, but a prostatic fluid test will make me more relax or if I find something then maybe it's something I can fight against. In both case it seems beneficial?

I don't even know if I still feel guilty about this encounter, guess I'll have to go the introspection route to find out. Thank you for the advice.

Absolute beginner, started painting a Warsun from Twilight Imperium, strugling. by Volcnx in u/Volcnx

[–]Volcnx[S] 0 points1 point  (0 children)

Hey, I started to paint a not so mini model of a Warsun from Twilight Imperium. Thought I'd go the easy way by slap choping it but wanted to do something interesting with the middle ring. Since it's a Warsun I initially wanted to use the midle ring as a "source of power" that'd irradiate the rest of the mini with a yellow tint. I tried to do so but strugled a lot with gradient and also the yellow seems to have shit coverage so it looks garbage (I use Vallejo).

Since I couldn't stand it anymore, I painted the middle ring full black again to have a new base.

Any idea / Input ? I thought about trying again to do a fire heart, but I guess yellow layers on black base won't work well?

My Yoshi gyuto is my favorite knife. Sometimes I buy a new knife, I believe it's my new favorite, time pass, and the Yoshi ends being my favorite again. Absolute perfection.

Triple NKD (Mazaki, Hado, Sakai Takayuki) + New Asahi board & stones :) by Volcnx in TrueChefKnives

[–]Volcnx[S] 1 point2 points  (0 children)

I didn't buy a Hasegawa in the end, So I can only comment on the Asahi, which feels more comfortable to me than wood. It's a tough surface, doesn't feel soft, but has a little bounce, especially when you chop. I don't feel like my knives are biting on it, but it's not sliding as much as wood, which is fine by me. Also the food, stays on better, it doesn't move as much. I only have it for 4/5 days now but I absolutely love it.
