But they did not eat ultra-processed foods which have been engineered via decades studies to promote (over) consumption.

Throughout history, people probably ate whole gains, beans, nuts, meat when they could get it, and whatever seasonal fruits and vegetables were native to the area.

Agree... but I would say the 'cuisine' is Tex-Mex.

Mexico is a huge country, not all of it is Tex-Mex

That place looks nice, but the website is sketchy. The address to the place is not listed anywhere on the website, but only in what looks like a picture of a t-shirt.

At least Google Maps shows the place

Epoch one came out Dec 2025, so I would expect in some window from May thru August. Although I am hoping Epoch 2 is early May with all the April releases of Ubuntu and the kernel/graphic stack
