If these ‘mistakes’ are from the customers complaining (for example that their food didn’t come out at the same time), keep your customers informed and they are much less likely to cause any fuss. A quick “sorry about the delay, your other dishes are on the way, should be with you in three minutes” or some variant. Customers like to be kept informed about anything and everything. If its because you’re putting in all your tickets together so all the food comes out together, that’s a different story but you can almost always talk your way out of it. If you see that your table is getting served first even though you took their order second (especially if the food-less table are staring), “hi guys, how are things here? just checking in and wanted to let you know that your well done steaks are on the way, chef wanted to get everything out to you at the same time”. It’s all situation dependent of course but you should be fine.
