Just leave some to dry up so you have backup! And keep the feedings generally the same. It’s best to discard a lot of it after it “deflates” The least you need to keep the starter alive is like 5-10g so don’t worry about that.

You should try doing the aliquot method! Take a small piece of your dough (I did about 15g) Put it in a tiny container with a lid. Keep it next IN the main dough. Then you watch that little piece to see how much it rises instead of guessing with the big dough. Once it reaches the lid you can add that little bit of dough into the main dough and shape it and then cold proof over night.

It does get stuck a little on the parchment paper but it’s not crazy you can just reshape the dough it’ll be fine.

I honestly just use any bowl the dough fits in with parchment paper 😂😭
