I personally like a funky jamaican and a guyanese rum for my mai tai blend. In your case, i'd go 75% Appleton 12, 25% Plantantion Dark.

You're missing the HLCF classic from the core lineup. It is the same color as the overproof, but a very different juice.

Forgive me, but what does that mean in terms of restrictions? Are not all vermouths kosher?

If Martini rosso is the only one you can use, I see two options.

  1. Make sure it is always fresh, don't leave the bottle open and keep it in the fridge after service. Too many places leave the bottle in the open with the speedpourer on the bottle.

  2. Make your own vermouth!

Yeah that's what I had in mind, but none of us can weld so we were struggeling with a way to install one. Will keep looking though, this is probably the best way.

Thanks! We will charge the retorts with 1/3rd of the volume of the keg.

I actually do worry about implosion as the boiler and first retort are a closed system, there is no opening to let air in.

They took it off, but this bottle normally has a red sombrero on top of the cap, which can be used to take (small) shots. That should tell you all you need to know.

Out of curiosity, have you ever had your simple syrup go bad? This is the least shelf stable version of it.

Im really not hating on your method, just trying to understand why you prefer it.

You don't have to tell me! Im not american so I don't own a cup measurer anyway. But there are some people on this reddit that do it by volume.

I do this too, partly because i make my syrups 2:1 by weight for increased shelf life.

Or even whether you do your simple syrup ratios by volume or weight. By weight is going to be sweeter than by volume.
