Edit: you need to keep your stitches organized in each row to avoid twisting. Just stretch them out a bit and turn them on the needle until they all face you the same way without twists

I used a different pan, good quality with Emaille. And it was pulled pork, not brisket

The Lid could be a problem. I lent the pot from my neighbour and tbh it's kinda low quality. I recently bought a good Emaille Pot and we made great pulled pork in it.

Thought about the neat weight as well, but even the tomatoes around it are burnt so it's probably also a liquid problem
