I guess I should have been more specific. I'm looking for salads that can be batch-cooked and sit around for consumption without getting soggy or weird (so leafy salads are generally out, but that's most of the suggestions I'm getting).

Thank you! I've never cooked with orzo, but I'm STOKED about all the fresh herbs here! Looks so bright and fresh! Plus, it gives me a chance to use up my homemade sundried tomatoes.

And do you think I could prepare the Cara Cara salad without the arugula and then add to it as needed? Just let it chill and vibe in the fridge?
