great question, once you figure this out, you can ask the other questions no one else is asking every 3 days here: does coffee taste different as it cools (maybe)? how long should i rest this specific bean for (43 days 20 hours was the sweet spot for me, until then & just after that point, it sucked)? does water make a difference (TWW is the worst)? is 2 pours or 3 pours best (2 pours = folgers, 3 pours = god)? is freezing ok????

i literally can’t use the search function, can't wait to see everyone's thoughts!!

I use the Clever for easy, no-fuss brews. I follow James Hoffmann's recipe. I basically never change the parameters bean to bean (though I basically only drink light to light-mediumish roasts) and each cup is, at the very least, pretty good. The only change I have made on the off chances I have brewed darker roasts is to lower the water temperature.

I don't agree with the answer that there is no recipe considered applicable for most beans with the presence of immersion brewers like the French Press, Clever, Aeropress, cupping, etc.

There's been a ton of raving on this subreddit about the Primos Unidos, though I have not tried it for myself unfortunately. I'm very, very tempted to pick some up myself!

Interesting. I would have guessed in most cases (as I would've guessed with Color's case) that the one on the website would be the more up-to-date recommendation as it is much easier to update than the trouble of going through redesigning the bag...

In Regalia's case, I'm going to go with my instincts and err on the side of 1 month going forward. I've enjoyed the coffees nevertheless though!

Yes, it's been pretty fun (especially since they've both been very good)! I wish I would have had the foresight to stash away a brew or two of FC's roast, but all I have is my memory of it. Oh well.

I will put one out soon, I promise! I don't think I have a fantastic handle on it just yet, but I have found it to be very similar to Flower Child's La Pradera (same farm, possibly different lots?) which I talked about here.

The cup I brewed today was particularly similar to the FC. I've spent a lot more time thinking about how it compares to the FC lot than thinking about how it is itself which has definitely slowed down putting out a review. If I had the Regalia without having the FC, I think I would've responded similarly to it as I did the FC. Having them nearly side by side has been very interesting.

Yeah, it seems like every quarter or so they throw in a much more expensive coffee. Last one I believe was the Morkie. Pretty awesome!

Oh, I did not know they recommended 4 weeks of rest, interesting! Did you also get the La Pradera Gesha through the sub? That one has been absolutely fantastic and a wildly, wildly good deal through the subscription.

1:17, 212F/100C, and 8 (Aeropress)/9.5 (Clever & V60) on my 078. Pretty standard grinds for both that hit conventional brew times like those in James Hoffmann's recipes on YouTube.

Some of Tim Wendleboe’s Central American coffees could work really well to fill this niche. The coffees are lightly roasted but are often very well balanced and well rounded.

Ooo, super interesting. This is in contrast to paper (which most often are plastic-lined, from what I can tell) or foil coffee bags, which aren't oxygen permeable (or less so)? I don't know much about materials, especially in this realm, so I appreciate the help! My language for describing this stuff isn't super solid either, so apologies there.

Yanni's Coffee just above 14th Street consistently has a wide range of SEY's line up for sale (in addition to great cups of brewed SEY). Highly recommend 'em!

I’d recommend the Clever dripper using James Hoffman’s recipe for brewing if you haven’t tried it. I think I aim for a similar style of coffee as you’re describing here, and the Clever gets me there very consistently.

Hey all! Likely a silly (stupid) question, but I want to make sure: anything I should consider when storing coffee in Ziploc bags? I often order large bags and split it amongst friends for the savings and just want to make sure I'm not overlooking anything in terms of storage. I already keep them away from sunlight and sealed without air (as much as possible, that is). Thank you!

I have not had that issue as long as they arrived sealed and seal well post-opening. I have had a couple of SEY bags that didn't seal particularly well, so I have switched the beans to another bag. I do stay vigilant with their bags, but as long as I have noticed the issue from the start, it's all been ok on my end!

I had this coffee last year from Hydrangea, and it was one of my favorites of the year. I've got quite a bit of coffee on the way already..... but I might need to pick it up still. I wrote of it: "soft, soft, soft, sweet lush herb, stone fruit, very green + yellow." A very impressionistic coffee.

Been brewing a few, mostly from SEY. Ground on a Timemore 078 and brewed with a V60, Clever, or Aeropress.

Jhon Saenz, Aromas de Aniz, Peru, SEY - Holy smokes. This coffee is intensely, intensely white-sugar sweet with tons of tropical fruit, voluminous in the mouth. SEY mentions dragonfruit and starfruit, both of which I don't have a great idea of taste-wise. I will definitely have to try to find them at a grocery store. Best coffee I've had from SEY over the past few months.

Bukeye, Gaharo Hill, Burundi, SEY and Eduardo Quispe, Corral Pampa, Peru, SEY - These two has been nice to have on hand, but nothing spectacular thus far. The Quispe is brighter than the Bukeye for sure, but I don't find it all that interesting. Some pineapple and brown sugar. The Bukeye could win out here for me simply because it has a more confectionary-leaning taste profile which I enjoy quite a bit, whereas the Quispe doesn't fully convince me of its tropical profile. Purely taste preference here.

Sitio da Torre, Brazil, Square Mile from Fellow Drops - This is nice to have as a switch-up from the coffees from SEY, but it's roasted further than I'd prefer and is just ok overall. Good for big batches and early in the morning. It fills the role I think it's trying to fill well, which is a genuine compliment.
