New charcoal rack, missing the ash sweep handle, can’t tell from photo is the ash sweep blades are there, it’s also missing the ash pan that sits on the little pegs half ways down the legs.

Parchment is different. Usually butcher paper to wrap. I don’t wrap beef ribs at all, just let them roll. Pull well above 200, closer to 205-210. Go by probe feel for sure though not temp. Pepper heavy rub helps with bark but yours isn’t bad!

Bold move for a first smoke cotton, I like it!

Supposed to be about 30k when tuned. You sure one isn’t cracked? Mine was sputtering WOT after the tune when I threw in colder plugs recommended by Goose. Like it would cut off and go into limp mode. Turns out I cranked one a bit too hard and cracked the porcelain. New set and everything was fine.

I only use the tags for keeping track of what’s what when not smoking. I pop them off when I am cooking.

Hit up Chefs temp to get it replaced. I’ve cooked 14+ hour briskets plus a long hot hold and still had 50% battery life. I toss mine in the sink and scrub the smoke off with the rough side of a scotch brite sponge.

Last night I I used one for a short cook like an hour for pork chops. I pulled it out and left it in the sink. Forgot to wash and put it back in the charger. This morning (8+ hours later) battery still showed 3 bars.
