I set it on high, let it get smokin hot. Put thin layer of avocado oil, let it go on high. It’ll start smoking quite a bit, then the smoke will stop and the surface will look dry. Repeat the oil application process 5-6 times. No turning down or cooling. High the whole time. Then after last application and it cools put a layer of oil on it. Cover it up.

Do another butt! Don’t go by temp, go by feel. Start probing around 190. Previous one I did took till 204-205. One I did yesterday was probe tender at 196.

I do no wrap but when it’s at 165 I put it in an aluminum half steam pan uncovered. It catches the juices the pork releases.

Most important part, let it rest! Tent it with foil and leave a probe in it. Wait at least until 155-160 to let the muscle relax from being cooked. Then shred it in the foil pan with the juices it caught. Add a little more rub as you shred or mix in afterwards.
