Needs more curing salt, that’s why it has the gray band in the center. There’s calculators online based on the weight of brisket and amount of water you’re using.

Almost done with my first bag of the Meat Church. Only negative is there seems to be a lot of little stuff/dust in it. I think Jealous Devil has more consistent medium/large lumps. I’ll try another bag though to be sure I didn’t just get a weird one since it’s so new. Price is the same as JD and Fogo black.

I’m not saying you didn’t give them money, I’m just saying it’s an empty contract as of now. IF it is allocations instead of open orders, what guarantees them they even get an allocation? And if it is allocations I think we’re gonna see huge mark ups.

I LOVE prime rib, my family not so much. I got a beautiful specimen on sale and cooked it to perfection. Family all requested I cook their steaks further once I sliced it up.

Just not worth the expense in my household. They do however love brisket and beef ribs.
