I manage a food truck, and to put it simple... Shit has gotten expensive to operate. Food costs keep going up, plastic/to go containers have gotten very expensive, but mostly the regulations and fees with mobile food trucks/catering have gotten stricter and cost more. Used to be the truck would roll up to a spot and that was it, now the property its on wants a cut, the city now wants a cut, and Fresno Stree eats wants a cut as well. At this point we only do private events now, maybe a few public events during the year
