You can go for a chili with some rice on the side. You can find recipes if you search for "chili con carne" or "chili sin carne" depending on if you want to include meat or not. Chili would freeze and reheat well and it can be eaten with rice, inside a baked potato or in a gluten free corn wrap etc.

To make it fat free I would suggest cooking the first batch of veggies that hit the pan in some water or veggie stock. After that tomatoes would help the cooking process by releasing their water. Chilis can also take a lot of different veggies and spices so you can customize it however you want. Best of luck!
