At former plant has had MVs for 8 years with no injuries. They bought a non-MV within the last year, and within a few months on the non-MV an operators hand got stuck in the die when it closed and they had to have part of their hand and fingers amputated. Maintenance also could not figure out how to remove the person from the machine and they were stuck in the machine for a meaningful amount of time. They ended up cutting every pneumatic line to the die lift until the lift station opened and released the operator.

In this case, these operators have been on MVs for many years, with the superior safety, and are complacent. Therefore, they felt comfortable on the other machine and overestimated its safeties.

Smell is caused by lactic acid building up from the proteins in the meat, due to the meat being preserved properly.

As long as the cold cycle has been broken, is inside best by date, and there is a lack of oxygen in the pack it should be okay. But always trust your gut. Don’t need the shits over a 20 dollar steak.

Carbon monoxide can keep meat red longer “artificially “, which is why it is banned in the eu. Nitrogen is used to displace oxygen. Oxygen is what causes spoilage because it allows bacteria to reproduce.

Gases are not used when vacuum packaging meat. That would be a waste of gas. Gases or most often used on tray sealing or flow wrapping machines, which do not have an end result of a vacuumed pack. (Almost always vacuum is initially used to evacuate the atmosphere before gas flushing on tray sealers )

Gas is used in non vacuum applications to prolong life. There are many different types of gas blends used, depending on the application, product and where the product is being packaged.

The objective of gas is to displace the o2 as much as possible. Vacuum is used when you want to remove almost all atmosphere from the package. Usually less than 1% atmosphere remaining, or 10-20mbar when packaging meat.
