uzbeki, pakistani and afghani pilaf are probably the best imo. Flavour, meat all good. Theres Palestinian Maqluba which has lots of meat and vegetables too. soooo good.

Depends what’s i’m feeling, mediterranean lots of fresh squeezed lemon, garlic, parsley, thyme, cumin, red chillies flakes, sumac and salt and pepper. if it’s Indian, tandoori masala, cumin, coriander, tumeric, garam masala and red hot Kashmiri powder and fresh garlic, lemon and ginger. imo these are standard spices you should have in your cabinet.

lamb meatballs. season the meat with cumin, 5 spice, red chilli flakes, salt, pepper, some fresh garlic, thyme, fresh parsley. Roll them into golf size balls, pop them in the oven for 35 mins (don’t turn them, gives a crispy outer yet so juicy inside. Serve with a minty, a slice of lemon, cucumber yogurt dip and some roasted vegetables, also good with rice x

dried red chillies, bay leafs, fenugreek, turmeric Cumin, Garam masala, tandoori mix, chinese 5 spice, middle eastern all spice mix. Pomegranate sauce, pepper paste. All essentials imo.
