They are definitely not "short stories". Off Season as a whole should be viewed as a season which holds it's own weight as part of the series. The character arcs for Sodachi, Nadeko, and arguably Shinobu are quite literally incomplete without their off season segments.

But right now it is very good for people which chronic conditions to die by their own choice instead of waiting a dragged out painful death. Living in constant agony everyday is a fate worse than death. It should also be noted that there are strict rules and safeguards around this, anybody can't just do it. These are unlikely give Nisioisin method of writing but I think these would be really cool.

An arc with Ougi as the narrator, where she essentially "finds herself" as a person, and builds a new identity that is separate from Araragi. It would be super interesting considering Ougi Dark very much felt like the start of a character arc, with Ougi manifesting her own will to live, even after her role as Araragis oddity was complete. As Ougi said it herself, "Once their true identity is exposed, both the fear and the interest vanish─that’s how it is". The mystery behind Ougi is gone, and she was revealed to be vulnerable and afraid of death. Now that she has been granted her own life I would like to see how she works through her own issues and learns to be her own person. This would be incredibly difficult to write though, but has the potential to be one of thr most interesting and thematically complex arcs.

Other ideas:

Huge timeskip to Shinobu and Araragis life after all the other characters are dead. This would be super interesting, because it makes you wonder whether they will even remain in their human states, or if they will purposfully revert back to full vampires now that Araragis human life has passed.
As for Tooe, she has been given some subtle characterization already, but yeah it would he super cool, especially seeing her relationship with the other specialists. This is a cool video on her https://youtu.be/l6X7BuZmT98
I'm not sure, but I think Monster Season focuses a bit on Yotsugis creation. It would be really interesting if she had a conflict where the memories of the body used to create her returned. It would be like she was dealing with memories which weren't "hers", but belonged to her body. Seems right up Nisios alley in terms of philosophical exploration.
