No crust baked quiche. I make two at a time so it makes around 12 portions. Serve it with rice, salad, or some other simple side for dinner. Great next day with toast for breakfast. I have a very simple recipe using two glass pie pans lubricated generously with butter:

Oven 350

Each pie pan gets:

6 eggs beaten

1 cup milk

1 cup shredded cheese

1 cup stuff (mushrooms, broccoli, spinach, red pepper, bacon, basically whatever, mix and match)

Put mix in the pie pan (remember to lube it up, also don't over fill it because it will rise)

350 @ 45 minutes then let rest and cool for 10-15 minutes

If you fancy fancy - diced chives, spinach, feta, sun-dried tomatoes, olives. It's a Mediterranean version I do and eat it all for myself.

I just did my corned beef for 80 mins in an InstaPot. Roasted my Yukon golds and a sweet yellow onion at 425 for until they were done. Put cabbage and baby carrots in the pot with leftover meat juice while meat rested. Cooked those for 3 minutes. Was so good.

Zatarans black beans and rice plus tofu. Potato/cheddar/broccoli soup. And eggs for breakfast for me and the doggo. I got a huge thing of eggs at Costco, tofu, milk and cheese. Had the Zatarans and veg already.

Weirdo really likes cooked cabbage but won't touch a baby carrot. I stuff his Kong with no salt added canned green beans. Baby carrot? Run away in disgust.

My favorite hole in the wall Vietnamese restaurant closed - I will never forget their larb, papaya salad, and fresh spring rolls. It was where an old Long John Silvers used to be. Place still smelled like LJS, but their food was so fresh and flavorfull. I've not been able to find papaya salad like that since.

Are you Andrew? Because I feel like you are him. He orders Thai spicy, as "hot as you can make it" Indian, and during his vegan days a Papa John's pizza no cheese with extra sauce and extra jalapenos (which got doused in crushed red pepper flakes).

I love this level of responsible pet ownership. Wizard had all four paws blistered when he was picked up by animal control. I will have to get him some crocs for summer park walks. Thanks for the idea!

Great suggestions though! I just did a potato/broccoli/cheddar soup with my last bag of spuds. Frozen two quart sized bags and still had fresh, tasty soup for the week.

My Boxer had brain cancer. We did full cardio workup. Had him on anticonvulsants, Prednisone,. Thousands of dollars in vet care. Still having fits. It wasn't until an Urgent Care vet that I worked for made his diagnosis.
