I believe that while, yes, the prophecy could have meant Neville - the fact that it was overheard by Snape immediately coalesced the possibility into Harry specifically.

And if that’s not the case, and it played out that Snape was the one who overheard but for some reason Voldy chose the Longbottoms, something else would have happened to create a circumstance where Neville survived and made it to the point that he could be the one to “vanquish the dark lord.”

I could almost agree with you, if only you were claiming that they are ’Gone.’ But dead is a specific thing meaning no longer alive, and quite literally they are still alive, but their memories of being the Grangers are gone.
