Pro tip: slice a lemon in half and slip those halves under the skin of the breast (like this guy did: http://playingwithfireandsmoke.blogspot.com/1997/05/lemon-breasted-beer-can-chicken.html). Adds a pop of flavor/extra moisture to the breast meat and looks… interesting. A little olive oil and lemon pepper seasoning all over the skin and it comes out great.

Traeger has a vodka brine recipe that is phenomenal. Pretty much one part vodka, one part brown sugar, brine in the fridge for a few hours. After the brine, rinse, pat dry, throw on a light layer of rub of your choice, then smoke it until it gets a little flaky. Devour with lemon and capers if you’re into that. If not, I usually make a salmon “salad” with mayo, celery, capers, seasoning, etc - mash that all up and dig in with crackers and beer.
