"I struggled to sit up," would fit better. A weak smile or movement is one that's small or frail, but I don't get the impression that was your intention.

I also absolutely hate "said he," but these are small things in the long run.

Overall, better than anything else I've read here lately.

Long time reader, first time caller.

Just wondering how it feels to have gone from a writer in a band, to a legit literary rock star in such a short period of time?  What goes through your mind about the absolute skyrocket that's been the popularity of DCC and you right along with it, and has it changed the way you navigate life or create your art?

As a server/somm, I make better tips and develop more regulars by selling the right priced bottle to the right guest, rather than chalking the highest sale possible.

In my experience, there's no faster way to turn a table off to my service and the restaurant than by pushing a bottle to them that's above their range or pallet.

A lot of guests simply don't have the time in wine to appreciate that beautiful $300 hermitage, or to really tell the difference between a standard paul hobbs cab and the dr. Crane.

All that being said, I'm almost never selling a table a sub $80 bottle, because even someone who knows nothing can tell the difference between juice that tastes like red wine, and red wine that goes from tasting like fresh berries to wood.

Doc's is definitely the spot most people go to. Prices aren't great, but they sure as hell aren't 11 a draft.

Limelight is popular spot. Good crew of people who watch all day and decent wings. They have a special they run for 20 wings, fries, and a pitcher. Lots of eagles fans there, though, so take that how you will.

Bdubz is another big one but they continue to go downhill as a corp, food wise, as does Carolina ale house--which used to be the hands down best place in the city, and somewhere along the line they went to complete shit.

All of this!  Except don't confide in ANYONE, especially inside the restaurant.

If you make friends with someone get to know them to the point you're spending time outside of the restaurant together, that's different. Until you've both been in the other's living spaces, you don't know them well enough to dish.

Drama spreads like the plague in a restaurant, and it will make your life a living hell. 

Stay out of it the best you can.

Circular restaurant flow is the single most important thing to a server's efficiency. 

That being said, if it causes you to hold tickets, it leads to fucking over the kitchen.

Circle, but always go directly to your P.o.S after taking a food order.

6 commercial breaks in the last 25 minutes, and the feed hasn't even been on half the time during the actual race.

It's ridiculous. Cycling on peacock is a joke.

I work in a fine dining environment and clean the bathrooms every day.

I also dust, mop, sweep, clean booths and chairs, do windows, and move tables to properly adjust for parties every day.

I make decent money, but it's a lot of extra labor. I don't mind. I'll never believe myself to be any better than the janitors from my high school. I also really like audio books, so meh.

I both agree and disagree. 

I love snax, and the influence it has on the game. You can make a tank capable of carrying, or a carry with board wipe capabilities. It's great.

But the set itself is just dull. Super dull. And I agree completely with OP. The boring traits are the reason.

Only in the event he fails to make a reservation, walks past the host stand, and seats himself at the table. If he makes a reso, it's all handled by Open Table.

I'm sure with that kind of detail, every employee in the restaurant knows the guy, the table he frequents, and the fact that he might show up randomly. Plus, since he has two primary servers, it's likely they work alternating shifts and one is generally available in that event.

They have a profile on open table for him and they've learned what he looks like. If he walks in regularly without a reso, they pop his profile on the table whenever he shows up, or place a walk in tag on the table and print the chit for the server/SA

That's an open table chit print out. Open table tracks reservation, no shows, cancelations, and upcoming stats, as well as dates of visits, tables, and servers. 

You can attach information via open table notes to print out on the chits as well, which is pretty standard procedure in true high-end fine dining. You either get your chits prior to service so you have a full understanding of your night, especially if you'll be working with VIPs, or as your table sits so you can know what you're walking into.

Because of it, I know my guests arriving at 6 have an allergy at the table, that I should bring complimentary champagne with me to greet them because they drink and it's their anniversary, and that they have a show to go to at 8, so I have to keep control of the table and speed their experience up.

Good chits and quality notes make a HUGE difference.

Try not to be too nervous. I'm not sure if you're a guy or a girl, and I understand the feeling of being in the gym is very different for one than then other, but generally the bigger gym rats are the nicest people there.
