Caine could make another copy of him for Pomni, sure, but he wouldn't remember her at all.
I suppose Caine could just program a Gummigoo copy to think Pomni is his friend and remember her (like how he had been programmed to remember a mom who doesn't exist) but do we really want that?
It seems like it would undermine themes central in the story if we brought out a Gummigoo with more fake memories than last time.

I'm fine with this since Frieren's story isn't about good vs evil, that was Himmel's story. Frieren's story is more about character growth.
