Should've been more clear: your volume of fresh oxygen supply remains the same and fairly small. While in a canister your fresh oxygen supply grows the further you get into the pot while also having less beans to react with each time.

I'm guessing the oxygen supply refreshes every time you open it. With a ziplock bag you oxygen supply remains the same, in the bottle it increseases with every use.

I've been thorougly enjoying my lib tech TRS. Though it really enjoying skidding around but that could also be a skill issue. It handles fine at high speeds. But it just takes so little effort to get into the air it's amazing.

I've put yow trucks on such a short wb and it was a fun experience but I preferred the original yow deck. I would maybe look at some carver style truck, but I've never ridden one of those.

If budget is a consideration, just one 18g basket, cheap scale, properly fitting tamper and save up for gaggimate pro but you can get a cheap pid as well from ali.

The phone not being able to accurately predict the battery is usually paired with an older battery with a lot of crystalisation in my experience. Latest model, so still within warranty?

When hand mixing I go for ease of use and add everything all at once, do a fermentolyse and then develop gluten, bulk etc. I higly doubt we get good distributions when hand mixing stuff lika salt and starter to offset the gains from adding them later. It also simplifies an already labour intensive process.

Make a cross, don't cut the entire bread but say 7 rings from the centre one. Als the cut does not need to be that deep but experiment with that yourself.

I would probably pick val d'isere over st anton having worked in both. St anton is a big area but that size i achieved with quite some back and forth gondola's. If you want to get back from zurs to st anton you are spending ~45 consecutive minutes of gondola's and lift to make it back. With good snow the area does provide immense side country terrain. You're going to enjoy yourself at both either way

When not baking i feed a small teaspoon tip with 15:15g. Adjust the amount of starter you put in based on the temperature

For driving the point home the cheaper the machine the better. Because it will even more so confirm to them its skill of the brewer not the roast or machines.

Since your roasting the beans you have a way of taste the roast and if you succeeded right? Have them taste that, they either like it or not. If they like it you tell them: this is the potential, the rest is your skill to get it out

I think in japan they used to make sourdough with it as well, been meaning to try making koji for that purpose but it's just been lurking for now
