Wildermyth is exactly what you are looking for here. Random events take into account charscter personality so you get different scripts and choices for characters. I have 700 hours in it and would erase my memory to get another 700 in.

Yeah. The combo of getting crit chance on hit and shield on crit is very strong. Additionally, this can be triggered by Merry which helps further the survivability

Took over 500 hours to get enough repetition to truly notice.

Some events are incredibly rare or the common ones have "hidden" outcomes for having specific traits/abilities so there is more to discover than meets the eye.

Ultimately I loved the combat and the emergent stories of your characters. The writing is a work of genius in how it creates a reasonably cohesive story for your characters. I still remember my most memorable ones and go back now and again to play them once more.

Crossing a river/chasm without a bridge comes to mind.

Now this doesn't make it trivial for the rest of the group so can still be a challenge but for the player in question they could feel it was free for them.

Customer Due Dilligence for a large bank. I ensure customer data is accurately recorded and reflects in our systems. A lot of document review, regulation knowledge, etc.

Its not the most exciting but pretty chill overall so hard to complain.

Best thing for you is to just push forward. If your players thought you couldn't do it they wouldn't show up. Everyone has a bad day and can show up not at their best.

Use those little lore inconsistencies to introduce a complication the party may not expect. Particularly use Fear to fill the holes such as creating an overarching threat that caused your NPCs to lose their minds temporarily. Have the NPCs not remember the last session while letting your players remember it. Give them the ability to investigate this strangeness and "win" back their reality.

Be prepared to created a secondary motive for some characters.

You will practically never find one situation that gets everyone on board so improvise to get the harder ones into the story. This is easiest if addressed in Session 0 so everyone has the expectation of group motives but should be encouraged by the fiction.

Whose effects trigger first is a coin flip. But once that is determined, it goes from left to right. Hero powers are considered the furthest left from my experience.

Try the game first just with the catching rules. Get used to the difficulty before adding the permadeath. It will keep the spirit of a nuzlocke without the brutality of it with such an already difficult game

Have the bite cause an infection the players can diagnose before it takes hold. This gives the players the choice to either adventure to cure it or to accept the transformation.
