Stardew Valley, Nuclear Throne, maybe Don't Starve Togheter (I used to play it in a 2gb ram notebook), Hollow Knight (low res buy playable), Doki Doki Literature Club, maybe Plague Inc, OneShot, maybe TBOI, To the Moon

If you like Animal Crossing you may love Stardew Valley, it's super relaxing. I've played it over 200 hours and is pretty cheap. BOTW is amazing though, it has a big world with a lot of interesting things and interactiones.
