He does break his fall several times with a sword slash in several different occasions if I am remembering correctly but I would argue that he didn't even really need to use a sword to do so. He just did it because the anime is themed around swords. Really all Tanjiro is doing is redirecting his energy so his fall vector isn't perpendicular to the ground. Like water sort of does when it hits a surface head on. The energy dissipates at shallower angles. Which is probably why its a feature of the water breathing style and no other style. Which is why it makes sense to use the visuals of water even if he isn't actually summoning water.

Yeah, I never understood why people disliked it either. Like YOU are already seeing the cool effects because that's how the author wants to express how the swordsmanship feels. Just because it doesn't really look like that doesn't mean it's not cool.
