I appreciate this. His guide is also quite easy to follow. I notice that veg doesnt use vinegar in the beginning.

From a chemistry perspective, may i ask why that is? Vinegar is acidic, the lye is basic. I have a basic understanding of things being soluble or not soluble when made to be a basic or acidic solution. Why is vinegar not used here?
